OLIVE CULTIVATION

Coratina.
History, identity and future.

We cultivate one of Puglia’s most representative olive cultivars. Coratina is our heritage, our responsibility and the starting point of our vision for the future.

HISTORY AND ORIGINS

Coratina is a historic cultivar closely linked to Puglia and to the area around Corato and northern Bari. Generations of olive growers have handed down its cultivation, helping to shape a distinctive landscape and agricultural culture.

A CULTIVAR
WITH CHARACTER

Coratina is a vigorous cultivar with a strong Mediterranean identity. Its olives can produce structured, intense oils with a clearly recognisable personality.

CORATINA OLIVE OIL

Coratina can express an intense and complex fruity olive oil, characterised by vegetal notes and a powerful structure. The balance between fruitiness, bitterness and pungency contributes to its strong sensory identity.

✦
Intense fruitiness Vegetal sensations, fresh grass, leaves and green notes.
◇
Bitterness and pungency Typical characteristics that contribute to the personality of the oil.
●
Great structure A bold, persistent and recognisable profile.

POLYPHENOLS AND
NUTRITIONAL VALUE

Coratina is particularly appreciated for its potential to produce oils with an important phenolic profile. Phenolic compounds are natural components of extra virgin olive oil and also contribute to its oxidative stability.

WHY BITTERNESS AND PUNGENCY
ARE QUALITIES

Bitterness and pungency are not necessarily defects in extra virgin olive oil. In Coratina they often represent a fundamental component of its sensory identity.

The more we understand olive oil, the more we learn to appreciate its complexity and authenticity.

CORATINA, TERRITORY
AND CULTURE

Coratina belongs to Puglia’s landscape, cuisine and agricultural culture. Olive groves, masserie, dry-stone walls and generations of people tell the story of a profound bond with this land.

CORATINA FACING
CLIMATE CHANGE

Extreme heat, water scarcity, soil health and new biological pressures are creating new challenges for olive growing. Protecting a historic cultivar means understanding its capacity to adapt more deeply every day.

FROM HERITAGE
TO RESEARCH

Understanding Coratina means protecting its value and opening new possibilities for the future. At Tenute Di Battista, tradition, research and innovation come together to build a new vision for olive growing in Puglia.
